Fury of Deimos + Psybolt Ammo

Personally, I think you would be able to.

Hardly anyone takes the Relic Bolter as is. People like to think Relics as near game-changers, and maybe that's why our Relic bolter isn't as good as other army's relic bolter, so that it can be stacked with our psybolt ammo.

I'd let people stack it. It's not game-breaking.

RAW you can't unfortunately. Fury of Deimos is not a storm bolter in terms of rules. Fluff-wise you could argue it is one since it requires you to have one and then replaces it but rules-wise Fury of Deimos is Fury of Deimos and the Psybolt Ammunition doesn't list Fury of Deimos as viable target.

In any case, this is definitely not worth it - neither taking Fury of Deimos, nor spending 2 precious CP on Psybolt ammy for only 6 shots. Unless, it is a campaign or friendly game, in which case no player in fair mind will forbid this.

It would be nice in the next CA, if GW adjusted psybolt to 1/3 CP for 1/2 units per shooting phase, explicitly allowing relic stack as well.

1CP Psybolt Ammunition would be a no-brainer and get used every single turn just like the 1CP re-roll Stratagem. Grey Knights really need more interesting Stratagem options on the whole. Something else to look forward to with the next CA I guess.

Dark Angels use their Weapons of the Dark Age every turn on 10-man hellblaster squad, and nobody complains. Both Psybolt Ammunition and Psychic Onslaught definitely have to go to 1 CP.
